3 cups of leftover mashed potatoes

1 sweet onion diced

2 tablespoons of cornstarch

1/2 stick of oleo

1 piece of celery diced

1 egg beaten

Add beaten egg, diced sweet onion,
and celery to the mashed potatoes.

In a microwave dish melt the oleo then
add the cornstarch stirring until there's
no lumps. Add the oleo mixture to the
other ingredients, then fry at 350 until
 the potato cakes are a golden brown.
