6 cups of persimmons ( after strained)
2 cups sugar
1 jumbo egg ( beaten)
3 cups of self rising flour (or what's needed to make like cookie dough)
1 teaspoon vanilla flavoring
Half cup olive oil

Use a strainer to strain the persimmons through into a mixing bowl. Use a large spoon to help with pushing the persimmons in to the mixing bowl through the strainer.

Once you have the amount of persimmons needed strained, start adding the other ingredients in the persimmons except for the flour. Stir until well blended. Once you have all the ingredients mixed well, add flour to the mixture.

Spoon cookie dough out on a greased cookie sheet in the size you want your cookies to be.

Heat oven to 350 degrees. Bake until a golden brown. Time depends on oven, so watch carefully not to over bake the cookies. It usually takes around twenty minutes to bake the cookies.

A helpful note: The easiest way to clean the strainer once you are done is to buy a regular hard bristle tooth brush to scrub with. Use hot water, and scrub with the tooth brush until the strainer is clean.
